Historien til espressomaskinen med spak starter med Gaggia. Selskapet ble grunnlagt i 1948. Før grunnleggelsen var Achille Gaggia den første personen som registrerte patent på en stempeldrevet spakbryggegruppe. Selve selskapet ble grunnlagt i 1948

Den første produksjonsmodellen espressomaskin som Gaggia produserte var Gaggia Classica. Etter dette fulgte forskjellige kommersielle espressomaskinmodeller som Gaggia Esportazione, Gaggia TS. Gaggia Spagna, Gaggia Internazionale og på slutten av 50-tallet det ikoniske Gaggia America. På 60-tallet produserte de modeller som Gaggia Orione. Den tradisjonelle spakgruppen endret seg også et par ganger teknisk, men prinsippet var det samme.

På begynnelsen av 50-tallet utviklet Gaggia også den første spak espressomaskinen for hjemmebruk, Gaggia Gila.

Gaggia-selskapet eksisterer fortsatt i dag, de produserer fortsatt kommersielle og innenlandske espressomaskiner. Men de avviklet produksjonen av spak espressomaskiner.
